Description: Have you ever searched for the perfect cup of coffee? In this JanTerm course, we will be learning about the contemporary artisanal “third-wave” approach to coffee which brings together the culinary pursuit of perfect taste with the scientific experimentation in a “coffee lab” setting. We will learn the ins and outs of preparing delicious coffees, thus actively cultivating our taste buds. We will get the hands-on opportunity to sample dozens of excellent coffees from roaster all over the U.S. and drink them together. We will explore and practice a variety of brewing methods (percolation, immersion, pressure extraction). We will wax nerdy by exploring grind patterns, extraction ratios and temperature curves. We will also learn about cultural traditions through which coffee has become the universal beverage that it is today. You are asked on a daily basis to consume and enjoy coffee. If you’re overly caffeine-sensitive, this course might not be for you.

Course Fee: $350–course fee covers all expenses we will incur: 1.) a starter brew kit for individual exploration for each student; 2.) many high-quality coffees for our sampling sessions; 3.) expenses for field trips and workshops with professionals; 4.) reading and learning materials
